How to Make Tripe Soup?

Ingredients needed to make tripe soup;

  • 1 kg tripe
  • 2 tablespoons of flour
  • juice of 1 lemon
  • 2 spoonful butter
  • 1 coffee cup of vinegar
  • 2 egg yolks
  • Salt
  • Red powdered pepper
  • 8 cloves of garlic

Making tripe soup;

  1. First of all, wash the cleaned tripe several times in plenty of water.
  2. Add enough water to pass three fingers over the tripe you have taken in a deep pot.
  3. Then add four chopped garlic and the juice of half a lemon and let it boil until the tripe is soft.
  4. Remove the boiled tripe from the pot with the help of a strainer and chop it into cubes.
  5. Strain the boiled water of the tripe and let it boil.
  6. For its dressing, mix two tablespoons of flour with the yolks of two eggs and the juice of one lemon.
  7. In order not to cut the soup, add a ladle of boiling water of the tripe to the seasoning and add it to the boiling soup, stirring slowly.
  8. Then add the chopped tripe and salt and continue to boil for about five minutes. And turn it off and let it rest.

How to Drink Tripe Soup?

After adding the rested soup to the bowls, prepare the sauce to add on it. For this;

  1. Finely grate four garlic cloves and add them to a cup of vinegar.
  2. Melt two tablespoons of butter in a small pan and add red pepper powder and mix well.
  3. Pour the garlic vinegar and then the butter on the tripe soup that you put on the serving plates, respectively.
